OLIPOP x Compartés is a limited drop of three chocolate bars, each built on an OLIPOP soda flavor: Ginger Ale, Pomegranate Sparkle, and Crisp Apple. Our chocolatiers hand-make every bar in small batches at our Los Angeles atelier. When it's gone, it's gone. Each bar takes a favorite OLIPOP flavor and gives it a second life in chocolate.

What is the OLIPOP x Compartés Collaboration?

It's a dialogue between a chocolate house that has worked in Los Angeles since 1950 and a soda maker that turned functional soda into a cultural fixture. Both started from the same question: what happens when you rebuild a familiar flavor with better ingredients and real craft? Both houses work in flavors people already love: soda shop classics on one side, candy shop memories on the other.

Our chocolatiers make these bars the way they make every Compartés bar. Each one starts with couverture chocolate, centers on what makes that OLIPOP flavor recognizable, and is finished by hand in the atelier.

Both houses take nostalgia seriously. OLIPOP built its following by bringing classic soda flavors back to their roots, and our maison has done the same with chocolate for over 75 years, using a familiar format as a canvas. OLIPOP flavors now run from Vintage Cola, Strawberry Vanilla and Cream Soda to Classic Root Beer, Cherry Cola, Ginger Ale and Watermelon Lime. Ask any fan for their go-to flavor, and the answer changes from person to person; for this edition, our chocolatiers chose three.

The Three Bars in Your Favorite Flavors

OLIPOP Ginger Ale Chocolate Bar

Zesty lime and crystallized ginger are folded into vegan dark chocolate. It opens like a ginger ale on a summer afternoon, warm and bright, then the dark chocolate takes it somewhere deeper. A clean citrus note stays on the finish. The lime keeps the sweetness in check, so the ginger tastes clean on the palate.

OLIPOP Pomegranate Sparkle Chocolate Bar

Silky white chocolate melts first, then the pomegranate arrives with a lively tang that brightens the finish. The bar is sweet and tart, and the color is as vivid as the flavor. Of the three, it's the brightest and most fruity flavor.

OLIPOP Crisp Apple Chocolate Bar

Creamy milk chocolate melts first, then the apple comes through, crisp and familiar. Of the three, it stays closest to the original soda: clean and uncomplicated. Where the soda tastes like sparkling apple juice, the bar keeps the apple front and center, with creamy milk chocolate underneath.

How a Soda Becomes a Chocolate Bar

For each bar, our chocolatiers asked what makes the OLIPOP flavor recognizable, then rebuilt that character from the chocolate outward, with real inclusions instead of extracts or artificial flavoring. They chose each chocolate to frame the flavor and tested every combination until the soda's signature note landed cleanly on the finish. It's the same discipline our atelier has applied to every bar since 1950. The aim was a perfect balance between the two: the soda's flavor up front, the chocolate's depth on the finish.
